Coconut Christmas Cake

Its that time of the year to throw caution to air and indulge in the heavenly, sinfully yummy Christmas cake. Indulge in gifts for everyone; enjoy the wonderful holidays and the lovely winter. Winter is a blessing to Kolkata, which suffers 6-7 months of blistering summer.
This is definitely not a recipe for the diet conscious, as I made this with my kid in mind. My girl wants to be a baker someday. She plans to make awesome cakes and has been lately helping me make cakes.
So brace up for the calorie attack and the delicious taste on your palate.
Eggs – 3
Vanilla essence – 1 tsp
Plain flour/Maida – 250 grams
Coconut – 1 cup
Coconut milk or plain milk – 1 cup
Butter – 100 grams
Sugar – 150 grams
Baking powder – 1 tsp
Custard powder – 2 tsp
Salt – a pinch

Sieve flour, custard powder, baking powder and a pinch salt together. Separate the egg whites from the yellow. Beat the egg whites until its stiff. Beat the yellow of the eggs, sugar and butter into a mixture. Add the coconut milk (or plain milk). Add the sieved flour into the above mixture.
Add the grated coconut, vanilla essence and mix well. Grease a 7 inch cake tin or a microwaveable dish.
Bake in a pre-heated oven at 180 degree for 30 minutes or 7 minutes in a microwave, with a standing time of 10 minutes.

Ingredients for Icing
Icing sugar – 100grams
Egg Whites – 2
White Chocolate – 50 grams (grated)
For the icing, beat the egg whites stiff. Add 100 grams icing sugar and beat till they peak. Spread the icing evenly on the cake. Sprinkle the white chocolate (normal chocolate is also ok) for the snow effect.
