Green gram Salad (Mulaipayiru Sundal)

Starting the New Year on a healthy note is so difficult after having binged on the year’s supply of goodies during Christmas and New Year. I say a year’s supply coz we manage to starve for the whole year and throw caution to air during these festive periods. What are New Year resolutions for then people!!

Thus back to my light on stomach recipes. This one is a typical South Indian evening snack, which is good enough to double up as a meal. Its made with whole green gram (Payaru, in Tamil) soaked overnight and a host of good items.

Green gram – 200 grams (soaked overnight and boiled)
Asafetida – ½ tsp
Mustard – 1 tsp
Curry Leaf – 7-8
Green Chilli – 2
Lemon Juice – 1 ½ tsp
Coriander – 3 tsp
Coconut – 3 tsp (fresh grated)
Salt – to taste
Oil – 1 tsp

Pressure cook the soaked green gram up to 1 whistle. Once the pressure is off, drain the green gram in a sieve. In a deep pan heat the oil and add the mustard. Once it splutters, add the asafetida powder, curry leaves and green chillies. Add the boiled, drained green gram and salt to taste. Mix thoroughly and take it off the heat. Add the lemon juice and mix. Garnish with coriander and grated coconut.
