Kosamri (Moong dal-Cucumber fresh salad)

Salads have always been on my list of favourite food. I call it food because I can almost live off salads and I love experimenting with various vegetables, fruits and pulses. The one that tops the list is the Moong dal-Cucumber salad or Kosamri. Kosamri is a very south Indian dish, especially made on the day the mythological God - Ram was born. No idea about the association of Kosamri with Lord Ram, but it’s a classic dish. The dish combines all fresh ingredients like Cucumber, coconut, chillies, lemon, coriander and is very palate cleansing. Rich in proteins as it has Moong dal. Easy to put together and will fly off the table.
Moong dal – 200 grams (soaked for 2-3 hours and drained) Cucumber – 1(grated)
Fresh Coconut – ½ cup
Fresh Coriander – ½ cup
Lemon – 1
Salt – to taste
Green Mango – 2 tsp (grated and optional)

For Tadka (seasoning)
Mustard – 1 tsp
Asafetida (hing) – ½ tsp
Curry leaf – 5-6 leaves
Green Chilli – 1- 2
Oil – 1 tsp

Soak the Moong dal for 2-3 hours and drain it completely. Grate the cucumber, coconut and     raw mango. Chop the green chillies and fresh coriander. To prepare the tadka, heat oil and add  the mustard seeds. Wait till it splutters, add asafetida, green chilli and curry leaf. Take it off the heat. In a mixing bowl, add the moong dal, grated cucumber, coconut, raw mango, fresh  coriander and the tadka. Squeeze the juice of one lemon and mix together all the ingredients. The Kosamri or fresh Moong dal- Cucumber salad is ready!
