Veggie Pasta with white sauce (low calorie)

Here comes the recipe of a people pleaser (read youngsters and now may be even paatties (grandma))! I sat and thought for almost half an hour to give a fancy name to my pasta, but just couldn’t come up with any. Pastas can be quite heavy and calorie rich. Hence came up with this version of light white sauce pasta made with Italian seasoning, which are easily available in markets these days. My kid loves this version of pasta and blackmailed me into writing this recipe.

Ingredients
Garlic – 7-8 cloves
Onion – 2
Capsicum – 1
Baby corn – 10
Mushroom – 10-12
Pasta – 200 grams
Pasta seasoning – 2 spoons
Rosemary – 1 spoon
Pepper – 1 tsp
Salt – to taste
Refined oil – 1 tsp
Cheese – 1 cubes
Mayonaisse –2tsp
Milk – ½ a glass
Extra virgin olive oil – 1 tsp (optional)

Method
Boil a litre of water and add ½ tsp of salt and ½ tsp oil. Add the pasta and boil it till its ‘al-dente’ (half cooked and firm). Drain the pasta and do not discard the water. The water in which its boiled has a little starch left and helps bind the pasta, so it is also called liquid gold! When the pasta is boiling, prepare the vegetables. In a wok, add 1 tsp of oil, chopped garlic, onion, chopped rosemary and sauté. Add the baby corn and mushroom, cover and cook for 3-4 minutes. Then add the capsicum and sauté. Add salt, seasoning, ground pepper and mix in the boiled pasta. Heat the milk slightly and take it off the heat. Add the kissan cheesy-garlic spread and grated cheese into the milk and pour this mixture over the prepared pasta. This is a light sauce compared to the heavy white sauce made with butter, refined flour and milk. Drizzle extra virgin olive oil before serving as it adds the amazing taste and rounds off the dish.
