Thukpa- My veg version!

A great summer spent at Mom’s place, an extended trip with Hubby to a beautiful place like Kalimpong and Gangtok, that’s what I call enjoying a good holiday. I always relish local cuisines and try to get its recipes.  Its great exploring street food and the vendors are at times ready to part with the yumm recipe they make.

One such recipe I always loved was the simple ‘Thukpa’ or a simple vegetable or chicken noodle soup.  It is a Tibetian/Nepali/Sikkimese dish. This is a dish that is most popular among the ‘tourist’ apart from the famous ‘Momo’. A clear soup is always offered with a plate of momos in the hills.

Carrot – 1
Capsicum – 1
Onion – 2
Garlic – 3 pods
Cabbage – 200 grams
Coriander – 100 grams
Instant Noodles – 100 grams (Optional)
Olive Oil – 1 tsp
Pepper – to taste
Salt – to taste

Method –
Heat a wok and add a teaspoon of oil. Sauté the garlic and chopped onions. Add all the vegetables and add 4 cups of water. Cover and let it simmer 7-8 minutes. Meanwhile boil the noodles separately till they are cooked yet firm. Once the soup is ready, season with salt and pepper. Then add the boiled noodles and serve piping hot!
